Creamy Hominy Casserole - Mom's
3 Tbspbacon grease or butter
1/4 cchopped onions
1/2 cdiced green bell peppers
15 ozcan hominy, drained and rinsed
10 ozcan mushroom soup
1/2 can(s)(soup can) milk
1/2 tspdry mustard
1/3 cblack olives, chopped, optional
1 cmild cheddar cheese,shredded
1 smallcan fried onion rings or use crushed potato chips
How to Make Creamy Hominy Casserole - Mom's
- Heat oven to 325^. Grease a 2 quart casserole and set aside.
Add the bacon grease in a medium saucepan heat to melt over medium heat . Add the onion and pepper and sauce until tender; about 2 minutes; then add the soup, milk and hominy to the pan with the mixture. Stir to combine.
- Now add the mustard, olives, and salt and pepper to taste. stir to combine.
In the prepared casserole layer 1/2 the hominy mixture, 1/2 the grated cheese, and 1/2 of the onions rings or crushed potato chips.
Repeat layering and end with the onion rings or crushed potato chips on top. Bake for 30 minutes, or until bubbly and heated through.
Instead of the mushroom soup.
1/2 cup chopped mushrooms
1/4 cup chopped onions
1/2 cup diced bell pepper
Sauté in 3 tablespoons of bacon grease then add 3 Tablespoon of flour and the 1/2 cup milk and dry mustard, salt and pepper; Stirring until well blended and thickened.
