Creamy Cheesy Broccoli Timball's

Diane Hopson Smith

In my effort to stick with a low carb diet, I am constantly looking for ways to keep it interesting and tasty!

I had some leftover broccoli and I added ingredients that are safe on my diet. You by no means have to use leftovers, you can steam some fresh broccoli and take it from there. Just make sure it's tender but not soggy.

I love my veggies and this was very satifying to say the least.

How to Make Creamy Cheesy Broccoli Timball's

  • 1Preheat oven to 375 degrees
  • 2Place broccoli, eggs, salt and pepper(s) in bowl of processor; process until smooth. Add cream, cheddar cheese and lemon juice; pulse a couple of times to blend.
  • 3Divide mixture into 6 prepared ramekins or small oven proof bowls. I used PAM. Place ramekins in a baking pan and add enough water to pan to come half way up the sides of the ramekins.
  • 4Bake for 25 to 30 minutes or until knife inserted comes out clean.
  • 5Remove from oven; add garnish. Let set for 5 minutes before serving.
