creamy cheesy broccoli timball's

In my effort to stick with a low carb diet, I am constantly looking for ways to keep it interesting and tasty! I had some leftover broccoli and I added ingredients that are safe on my diet. You by no means have to use leftovers, you can steam some fresh broccoli and take it from there. Just make sure it's tender but not soggy. I love my veggies and this was very satifying to say the least. Inspired from America's Favorite Name Brand Holiday Recipes. Hope you enjoy!

Ingredients

  • 1 pound broccoli, steamed (tender but not soggy)
  • 3 large eggs
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper, coarse ground
  • 1/4 teaspoon cayenne pepper, optional (i like a little heat)
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded (i used sharp)
  • 1 tablespoon lemon juice
  • - snipped green onions for garnish
  • - chopped tomato for garnish

How To Make creamy cheesy broccoli timball's

  • Step 1
    Preheat oven to 375 degrees
  • Step 2
    Place broccoli, eggs, salt and pepper(s) in bowl of processor; process until smooth. Add cream, cheddar cheese and lemon juice; pulse a couple of times to blend.
  • Step 3
    Divide mixture into 6 prepared ramekins or small oven proof bowls. I used PAM. Place ramekins in a baking pan and add enough water to pan to come half way up the sides of the ramekins.
  • Step 4
    Bake for 25 to 30 minutes or until knife inserted comes out clean.
  • Step 5
    Remove from oven; add garnish. Let set for 5 minutes before serving. Enjoy!
