I STARDED COOKING COLLARDS A LONG TIME AGO AND WHEN THE LOVE OF MY LIFE CAME TO ME ( THANK GOD ) HE WAS FROM LANCASTER S.C. AND HE SAID THAT HIS BIG MAMA ALWAYS PUT APPLE CIDER IN HER COLLARDS SO I DID AND SHE WAS RIGHT, SO THAT THE WAY I DO THEM NOW AND SERVE THEM WITH FRIED CORN BREAD. THANK YOU BIG MAMA!!!!

Ingredients For country collard's

  • 4 bunch
    collard greens
  • 6 c
    chicken broth
  • 1 lg
    sweet onion
  • 1/4 c
    bacon fat
  • 1
    ham hocks
  • 1 tsp
    chili powder
  • 1/2 tsp
    oregano, dried
  • 1 tsp
    red pepper flakes
  • 1 tsp
    paprika, sweet mild
  • 1 tsp
    garlic powder
  • 2 Tbsp
    apple cider vinegar
  • 1 Tbsp
    sugar
  • 1 Tbsp
    salt and pepper

How To Make country collard's

    TRIM THE STEMS FROM THE COLLARDS AND CHOP THE COLLARD COARSELY AS WELL AS THE ONION.

    IN DUTCH OVEN PUT BACON FAT ADD ONION COOK TILL SOFT ADD GREEN'S AND HAM HOCK, CHICHEN BROTH AND APPLE CIDER VINEGAR AND ALL THE SPICES, BRING TO BOIL REDUCE THE HEAT AND SIMMER COVERED ALL DAY.
