This is a really good dish .and very easy to make .Good spring or summer dish .

Ingredients

  • 6 cups fresh corn kernels from 6 ears
  • 2 pounds cherry tomatoes cut in half
  • 4 - scallions thinly sliced
  • 4 - jalapeno peppers seeded and thinly sliced
  • 1/4 cup olive oil, extra virgin
  • 1/4 cup fresh lime juice
  • 1 teaspoon krosher salt
  • 1/4 teaspoon pepper

How To Make corn salad with tomatoes

  • Step 1
    In a large bowl,combine corn,tomatoes ,scallions,jalapenos,oil,lime juice ,kosher salt and pepper.
  • Step 2
    make ahead - perpare the salad without tomatoes and refrigerate for up to 1 one day.Before serving, fold in tomatoes.
