  • 1 medium
    red onion
  • 3
    peeled and seeded cucumber ( i like english cucumbers but they can be too expensive if you are making large batches)
  • 3 Tbsp
    rice vinegar
  • 2 Tbsp
    olive oil
  • 2 Tbsp
    fresh dill, chopped
  • ·
    salt and pepper to taste
  • ·
    black and regular sesame seeds to garnish (optional) but very good)

How to Make Cool Cucumber Dill Salad


  1. Toss sliced onions with 1 TBLS Rice Vinegar, set aside
  2. Place peeled, sliced, seeded cucumbers in a colander and toss with 1/4 tsp of salt, let drain 10 minutes then pat dry.
  3. in a large bowl mix onions and cucumbers with olive oil, remaining (2 TBLS) of vinegar and dill. Season (salt and pepper) garnish (sesame seeds) and chill until served ( about 30 minutes is preferable, but is optional)
