cool cucumber dill salad

This is soooo yummy, cool refreshing, easy and no mayo in the sun worries. (this photo was not taken by me)

Ingredients

  • 1 medium red onion
  • 3 - peeled and seeded cucumber ( i like english cucumbers but they can be too expensive if you are making large batches)
  • 3 tablespoons rice vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons fresh dill, chopped
  • - salt and pepper to taste
  • - black and regular sesame seeds to garnish (optional) but very good)

How To Make cool cucumber dill salad

  • Step 1
    Toss sliced onions with 1 TBLS Rice Vinegar, set aside
  • Step 2
    Place peeled, sliced, seeded cucumbers in a colander and toss with 1/4 tsp of salt, let drain 10 minutes then pat dry.
  • Step 3
    in a large bowl mix onions and cucumbers with olive oil, remaining (2 TBLS) of vinegar and dill. Season (salt and pepper) garnish (sesame seeds) and chill until served ( about 30 minutes is preferable, but is optional)
