Ingredients
- 1 cup brown rice, uncooked
- 1 1/4 cups water, cold
- 1 can (14 oz) 33%-less-sodium garden vegetable broth
- 1 teaspoon salt free seasoning blend
- 1 cup broccoli, fresh
- 1/2 cup carrots, shredded (about 1 med.)
- 1 jar pimientos, diced (2 oz. jar drained)
How To Make confetti rice

Step 1In 3-quart saucepan, heat water, broth and seasoning blend to boiling. Stir in rice; reduce heat to low. Cover and simmer 15 minutes.

Step 2Stir in broccoli and carrot. Cover and cook about 5 minutes or until rice and broccoli are tender. Stir in pimientos. Let stand 5 minutes.
