confetti cole slaw

This is my "fancy" version of a local favorite. I've added diced apple, sweetend dried cranberries, pineapple tidbits, sunflower seeds and bacon to give this side dish a savory yet sweet new twist!

Ingredients

  • DRESSING:
  • 1 1/2 cups mayonnaise
  • 6 tablespoons sugar
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons fresh squeezed lemon juice
  • SALAD:
  • 1 medium size head cabbage, shredded
  • 1 small carrot, shredded
  • 1 medium gala apple, cored and diced
  • 1 - 15 ounce can pineapple tidbits, drained
  • 3/4 cup sweetened. dried cranberries
  • 1/2 cup roasted and salted sunflower seeds
  • 8 - slices bacon, cooked and crumbled

How To Make confetti cole slaw

  • Step 1
    In a small bowl, combine the mayonnaise, sugar, vinegar and lemon juice. Whisk until well blanded and set aside.
  • Step 2
    In a large bowl, combine the cabbage, carrot, apple, pineapple, dried cranberries and sunflower seeds. Mix well.
  • Step 3
    Pour dressing over all and toss gently to coat.
  • Step 4
    Transfer to a serving bowl and sprinkle crumbled bacon evenly over top.
