confetti cole slaw
This is my "fancy" version of a local favorite. I've added diced apple, sweetend dried cranberries, pineapple tidbits, sunflower seeds and bacon to give this side dish a savory yet sweet new twist!

Ingredients
- DRESSING:
- 1 1/2 cups mayonnaise
- 6 tablespoons sugar
- 3 tablespoons apple cider vinegar
- 3 tablespoons fresh squeezed lemon juice
- SALAD:
- 1 medium size head cabbage, shredded
- 1 small carrot, shredded
- 1 medium gala apple, cored and diced
- 1 - 15 ounce can pineapple tidbits, drained
- 3/4 cup sweetened. dried cranberries
- 1/2 cup roasted and salted sunflower seeds
- 8 - slices bacon, cooked and crumbled
How To Make confetti cole slaw

Step 1In a small bowl, combine the mayonnaise, sugar, vinegar and lemon juice. Whisk until well blanded and set aside.

Step 2In a large bowl, combine the cabbage, carrot, apple, pineapple, dried cranberries and sunflower seeds. Mix well.

Step 3Pour dressing over all and toss gently to coat.

Step 4Transfer to a serving bowl and sprinkle crumbled bacon evenly over top.
