Ingredients For collard greens

  • 1 1/2 pound collard greens, rinsed, trimmed (ribs removed) and chopped
  • 3 - 4 tbsp spiced butter (or oil)
  • 1 small onion, finely chopped, (red, white or yellow)
  • 2 garlic cloves, finely chopped
  • 2 tsp fresh ginger, minced
  • 1 tbsp spiced butter (or oil)
  • 1 fresh,(yellow or red) hot pepper, finely chopped, (remove seeds unless you like it hot)
  • 1 tbsp fresh lemon juice,
  • 1 tsp salt, sea, fine
  • 1 tsp hot paprika
  • 1/2 tsp coriander, ground
  • 1/4 tsp cardamom, ground
  • 1/2 tsp allspice, ground

How To Make collard greens

    In a large pot add 2 cups of water and the collard greens and bring to a boil. Turn the heat to low, cover the pot and simmer for about 15 minutes. Drain the greens, reserving the cooking water and set aside until needed.

    Set a large pan over medium high heat and added the butter or oil. Add the onions and cook for 7 - 10 minutes, then stir in the garlic and ginger.

    Now you are going to add the drained greens, 1 tbsp butter or oil and the reserved cooking water into the pan and simmer, uncovered on medium high heat 15 minutes.

    Add the green pepper, lemon juice, salt, and spices and cook for 5 more minutes.
