Ingredients For chinese noodle pancakes

  • 5 lg
    eggs
  • 8 oz
    pork sausage, crunbled, cooked and drained
  • 3 oz
    can chow mein noodles
  • 1/2 c
    packed shredded carrots
  • 1/2 c
    finely chopped onion
  • 1/2 tsp
    diced thyme
  • 1/4 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/4 c
    vegetable oil for frying

How To Make chinese noodle pancakes

  • 1
    Lightly beat eggs in a large bowl. Add remaining ingredients, except oil, stir to blend. Hear oil in large skillet over medium-high heat. Drop 1/4 cupfuls pancake mixture in hot oil. Cook 3 minutes on each side until golden brown. Drain on paper towels, Makes 4 servings.
