Ingredients
- 3 large chinese eggplant, cut down middle n then in 1/2 moons
- 1/8 cup vegetable oil
- 3/4 cup chicken broth (or vegetable broth)
- 1 tablespoon chinese chili paste (use less if u arent into spicy)
- 5 cloves garlic, cut into 1/4 (i used roasted garlic)
- 1 teaspoon sugar
- 1 teaspoon cornstarch
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce

Step 1HEAT VEGETABLE OIL IN LARGE PAN OVER HIGH HEAT. STIR IN EGGPLANT N GARLIC...COOK UNTIL SOFT ABOUT 8 miINUTES (ADD MORE OIL IF NEEDD - 1 TBLSPN AT A TIME)

Step 2STIR IN CHICKEN BROTH N CHINESE CHILI PASTE COVER N SIMMER UNTIL LIQUID IS MOSTLY ABSORBD. NOW MIX IN A SMALL BOWL SUGAR, CORNSTARCH, SOY SAUCE N OYSTER SAUCE UNTIL ALL IS DISSOLVED.

Step 3ADD CORNSTARCH MIXTURE TO ZUCCHINI N COOK UNTIL SAUCE HAS THICKENED...ENJOY :)
