Chinese cucumber salad

Rebecca Rogers

" ..the way to make Chinese cucumber side dish is to use either Indian,Japanese, Taiwanese,or Tianjin style cucumbers.the skinnier the crunchier. Kirby's are okay but when you pick them always feel it before you buy. If it's hard and breaks easily, buy it,if soft and rubbery, skip it, do the same with fruit." Anne Lee

Some like this dish finished with hot chili oil.
