Ingredients
- 3 tablespoons butter
- 1-1/4 cup breadcrumbs
- 2 tablespoons finely chopped parsley
- 1 small onion, chopped
- 1/2 pound yellow crookneck squash, diced
- 3 cups cherry tomatoes
- 1 teaspoon minced garlic
- 1/2 cup shredded swiss cheese, i used reduced-fat
How To Make cherry tomato& yellow squash crumble

Step 1Heat oven to 400. Spray a 9" square baking dish w/ cooking spray. Melt 1 tbsp butter in lg skillet over medium heat. In bowl, pour 2 tbsp butter over breadcrumbs. Stir in parsley.

Step 2Add onion to skillet and cook 9 mins. Stir in squash and cook 4 mins. Add tomatoes and garlic and cook until tomatoes are warmed through, about 2 mins. Transfer tomato mix to baking dish.

Step 3Sprinkle cheese on top. Spread breadcrumb mix over cheese. Bake about 30 mins, or until bubbly.
