Cheese-Filled Mushroom Caps
24large mushrooms (fresh),caps reserved,stems minced.
1/3 cbutter, unsalted
2 tspminced onion
3/4 cbread crumbs
2 Tbspfresh parsely minced
2 Tbspfresh lemon juice
3 oz(3/4 cup) goat cheese crumbled
2 (1/2 cup ozblue cheese crumbled
1/4 stickbutter, unsalted
How to Make Cheese-Filled Mushroom Caps
- place mushroom caps,hollow side up,in9x13-inch baking dish. Preheat oven to 450f.
- melt buter in a medium skillet. Add miced stems and onion,and saute over med heat untill soft. Remove from heat and add bread crumbs,parsley,lemon juice,and salt. Mix well:cool to room temperature.
- Stir in cheeses until combind. Spoon cheese mixture into mushroom caps. Brush with melted butter. Bake 5-7 minutes until lightly browned.
