Just a nother way o stuff mushrooms. And i love stuffed mushrooms.

Ingredients

  • 24 - large mushrooms (fresh),caps reserved,stems minced.
  • 1/3 cup butter, unsalted
  • 2 teaspoons minced onion
  • 3/4 cup bread crumbs
  • 2 tablespoons fresh parsely minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon salt
  • 3 ounces (3/4 cup) goat cheese crumbled
  • 2 (1/2 cup ounces blue cheese crumbled
  • 1/4 stick butter, unsalted

How To Make cheese-filled mushroom caps

  • Step 1
    place mushroom caps,hollow side up,in9x13-inch baking dish. Preheat oven to 450f.
  • Step 2
    melt buter in a medium skillet. Add miced stems and onion,and saute over med heat untill soft. Remove from heat and add bread crumbs,parsley,lemon juice,and salt. Mix well:cool to room temperature.
  • Step 3
    Stir in cheeses until combind. Spoon cheese mixture into mushroom caps. Brush with melted butter. Bake 5-7 minutes until lightly browned.
