I made the beans and they did not have a name so friends started calling them Cha Cha beans. It does not get any easier than this.

Ingredients

  • 1 - small bag of dried pinto beans
  • 2 - small pieces of salt pork
  • 1 - medium tomato seeded and diced
  • 1 - medium onion, diced
  • 1/2 - cup chopped cilantro
  • 2 - jalopena's seeds removed and diced
  • 2 - limes (you might only need 1, depending on the size.

How To Make cha cha beans

  • Step 1
    Cook pinto beans using the quick method on the back of the beans. Add the salt pork while cooking. Salt and pepper to taste.
  • Step 2
    Salsa directions: Mix together the tomatoes, onions, cilantro, jalopena's. Squeeze juice of the lime over the ingredients.
  • Step 3
    How to serve: Place the beans in a serving bowl and put salsa on top. This is good served with some buttermilk cornbread.
  • Step 4
    Tip: You can buy ready made salsa in the produce department. Tip: You can leave some of the seeds in the salsa if you want to kick it up.
