This recipe is taken from a cookbook titled "Tempting Dishes for the Small Income" circa the late 1800's. Amounts have been converted to current measurements and language has been slightly altered to make it less confusing.

Ingredients

  • 4 - heads of celery, white part only
  • 2 - onions, peeled and sliced thin
  • 4 ounces diced lean ham
  • 8 cups chicken or vegetable stock
  • 4 tablespoons butter
  • 2 tablespoons flour
  • - salt and white pepper to taste
  • 1 cup cream or milk

How To Make celery soup

  • Step 1
    Cut celery into 1 in. pieces.Put them in a pot with onions,ham,and once cup of stock.
  • Step 2
    Boil until vegetables are soft.Run mixture through a blender and return to pot.
  • Step 3
    Add remaining stock, butter, salt,pepper, and flour that has been mixed with small amount of stock to make a thin liquid.
  • Step 4
    Bring to a boil and continue cooking for another 1/2 hour.
  • Step 5
    Add cream or milk and serve.
