1 largehead cauliflower or 2 small
1/3 cextra virgin olive oil + more for greasing
·juice of 1-1/2 lemons
1/2 tspfreshly grated or ground nutmeg
1/2 tspsea salt
·frehly ground pepper to taste.
How to Make Cauliflower with Olive Oil and Lemon
- Preheat oven to 400.Spray a large foil lined baking dish with oil
- Rinse and drain the cauliflower.
Cut off the thick stems and trim the leaves.
Separate into 2 inch florets.
- Place in a single layer in the prepared baking dish and drizzle with the 1/2 cup oil and the lemon juice.
Sprinkle with the nutmeg and salt and pepper to taste.
- Roast,turning occasionally,until fork tender,about 20 minutes.
You may serve hot or at room temperature.
