1 large
head cauliflower or 2 small
1/3 c
extra virgin olive oil + more for greasing
juice of 1-1/2 lemons
1/2 tsp
freshly grated or ground nutmeg
1/2 tsp
sea salt
frehly ground pepper to taste.

How to Make Cauliflower with Olive Oil and Lemon

Step-by-Step

  • 1Preheat oven to 400.Spray a large foil lined baking dish with oil
  • 2Rinse and drain the cauliflower.
    Cut off the thick stems and trim the leaves.
    Separate into 2 inch florets.
  • 3Place in a single layer in the prepared baking dish and drizzle with the 1/2 cup oil and the lemon juice.
    Sprinkle with the nutmeg and salt and pepper to taste.
  • 4Roast,turning occasionally,until fork tender,about 20 minutes.

    You may serve hot or at room temperature.
