Ingredients
- 1 large head cauliflower or 2 small
- 1/3 cup extra virgin olive oil + more for greasing
- - juice of 1-1/2 lemons
- 1/2 teaspoon freshly grated or ground nutmeg
- 1/2 teaspoon sea salt
- - frehly ground pepper to taste.

Step 1Preheat oven to 400.Spray a large foil lined baking dish with oil

Step 2Rinse and drain the cauliflower. Cut off the thick stems and trim the leaves. Separate into 2 inch florets.

Step 3Place in a single layer in the prepared baking dish and drizzle with the 1/2 cup oil and the lemon juice. Sprinkle with the nutmeg and salt and pepper to taste.

Step 4Roast,turning occasionally,until fork tender,about 20 minutes. You may serve hot or at room temperature.
