Ingredients

  • 1 large
    head cauliflower or 2 small
  • 1/3 c
    extra virgin olive oil + more for greasing
  • ·
    juice of 1-1/2 lemons
  • 1/2 tsp
    freshly grated or ground nutmeg
  • 1/2 tsp
    sea salt
  • ·
    frehly ground pepper to taste.

How to Make Cauliflower with Olive Oil and Lemon

Step-by-Step

  1. Preheat oven to 400.Spray a large foil lined baking dish with oil
  2. Rinse and drain the cauliflower.
    Cut off the thick stems and trim the leaves.
    Separate into 2 inch florets.
  3. Place in a single layer in the prepared baking dish and drizzle with the 1/2 cup oil and the lemon juice.
    Sprinkle with the nutmeg and salt and pepper to taste.
  4. Roast,turning occasionally,until fork tender,about 20 minutes.

    You may serve hot or at room temperature.
