Cauliflower with Olive Oil and Lemon
head cauliflower or 2 small
extra virgin olive oil + more for greasing
freshly grated or ground nutmeg
frehly ground pepper to taste.
How to Make Cauliflower with Olive Oil and Lemon
1Preheat oven to 400.Spray a large foil lined baking dish with oil
2Rinse and drain the cauliflower.
Cut off the thick stems and trim the leaves.
Separate into 2 inch florets.
3Place in a single layer in the prepared baking dish and drizzle with the 1/2 cup oil and the lemon juice.
Sprinkle with the nutmeg and salt and pepper to taste.
4Roast,turning occasionally,until fork tender,about 20 minutes.
You may serve hot or at room temperature.
