Ingredients

  • 1 large head cauliflower or 2 small
  • 1/3 cup extra virgin olive oil + more for greasing
  • - juice of 1-1/2 lemons
  • 1/2 teaspoon freshly grated or ground nutmeg
  • 1/2 teaspoon sea salt
  • - frehly ground pepper to taste.

How To Make cauliflower with olive oil and lemon

  • Step 1
    Preheat oven to 400.Spray a large foil lined baking dish with oil
  • Step 2
    Rinse and drain the cauliflower. Cut off the thick stems and trim the leaves. Separate into 2 inch florets.
  • Step 3
    Place in a single layer in the prepared baking dish and drizzle with the 1/2 cup oil and the lemon juice. Sprinkle with the nutmeg and salt and pepper to taste.
  • Step 4
    Roast,turning occasionally,until fork tender,about 20 minutes. You may serve hot or at room temperature.
