Ingredients
- FOR THE SALSA
- 1/2 cup walnuts
- 1/4 cup olive oil
- 2 tablespoons drained capers
- 1/4 cup parsley
- 1 tablespoon dried currants
- 1 tablespoon balsamic vinegar
- salt and pepper
- FOR THE CAULIFLOWER
- 1 large head cauliflower
- 3 tablespoons olive oil
- 1 lemon halved
- salt
- FOR THE YOGURT SAUCE
- 1 cup plain greek yogurt
- 1 tablespoon fresh lemon juice
- 1 teaspoon honey
- salt
How To Make cauliflower steaks with walnut caper salsa

Step 1For the Salsa Preheat oven 350 degrees. Toast the walnuts on a baking sheet for 10 minutes.

Step 2Heat oil in small saucepan and add the capers. Swirl and cook until capers burst. remove from heat and add the currants. Let cool then add the walnuts, parsley and vinegar. season with salt.

Step 3Raise the heat in oven to 425 degrees. Trim the cauliflower to the stem. Cut the steaks out of the middle of the head. Should be able to get 2 or 3. Heat the oil in a large oven proof pan and add the cauliflower steaks and the lemon cut half down.

Step 4Cook the steaks until browned on both sides. about 5 minutes each side. Season with salt. Transfer to the oven and roast until fork tender

Step 5For the yogurt sauce. Mix all the ingredients together.

Step 6To serve Plate the yogurt sauce. Top with a cauliflower steak and top with the walnut caper salsa.
