Ingredients
- 4 cups blanched cauilflower
- 2 -3 tablespoon reduced fat mayo
- 3 teaspoons apple cider vinegar
- 1/4 cup red onion , thinly sliced
- 2-3 packages artificial sweetener
- 2 teaspoons dijon mustard
- 1/3 cup raisins
- pinch salt and pepper to taste
- 1/2 cup frozen english (green) peas , thawed
- 5 slices bacon ; cooked,drained & chopped (optional)
How To Make cauliflower salad

Step 1To blanch cauilflower: bring a large pot of slightly salted water to boil. add cleaned and chopped cauliflour. Boil until just crisp tender (2-4 min depending on how small you chopped the cauliflower.) drain and put cauliflower into icewater to stop cooking. Let cool . Drain. Set aside.

Step 2Mix all remaining ingredients(except peas)

Step 3Fold in cauliflower and peas. Add bacon if desired. refridgerate .
