Ingredients
-
4 cblanched cauilflower
-
2 -3 Tbspreduced fat mayo
-
3 tspapple cider vinegar
-
1/4 cred onion , thinly sliced
-
2-3 pkgartificial sweetener
-
2 tspdijon mustard
-
1/3 craisins
-
pinchsalt and pepper to taste
-
1/2 cfrozen english (green) peas , thawed
-
5 slicebacon ; cooked,drained & chopped (optional)
How to Make cauliflower salad
- To blanch cauilflower:
bring a large pot of slightly salted water to boil.
add cleaned and chopped cauliflour.
Boil until just crisp tender (2-4 min depending on how small you chopped the cauliflower.)
drain and put cauliflower into icewater to stop cooking.
Let cool . Drain. Set aside. - Mix all remaining ingredients(except peas)
- Fold in cauliflower and peas.
Add bacon if desired.
refridgerate .
