Hubby LOVES this salad! Can be made low-carb and lowfat! Great alternative to coleslaw.

Ingredients

4 c
blanched cauilflower
2 -3 Tbsp
reduced fat mayo
3 tsp
apple cider vinegar
1/4 c
red onion , thinly sliced
2-3 pkg
artificial sweetener
2 tsp
dijon mustard
1/3 c
raisins
pinch
salt and pepper to taste
1/2 c
frozen english (green) peas , thawed
5 slice
bacon ; cooked,drained & chopped (optional)

How to Make cauliflower salad

Step-by-Step

  • 1To blanch cauilflower:
    bring a large pot of slightly salted water to boil.
    add cleaned and chopped cauliflour.
    Boil until just crisp tender (2-4 min depending on how small you chopped the cauliflower.)
    drain and put cauliflower into icewater to stop cooking.
    Let cool . Drain. Set aside.
  • 2Mix all remaining ingredients(except peas)
  • 3Fold in cauliflower and peas.
    Add bacon if desired.
    refridgerate .
