Ingredients

  • 1 - cauliflower, fresh
  • 1 cup mixed vegetables, frozen
  • 2 - green onion, chopped
  • 1 tablespoon canola oil
  • 1 - egg, scrambled and 1/4 cup of low sodium soy sauce

How To Make cauliflower rice veggie fry

  • Step 1
    Cut Cauliflower in pieces, discard stem
  • Step 2
    "Rice" in a food processor, pulsing several times until it looks like rice.
  • Step 3
    Saute in a skillet with the canola oil and chopped green onions.... till a little brown.
  • Step 4
    add in the soy sauce ( adjust to your taste as needed) as well as the frozen veggies, fry together and cover about 5 -10 mins until frozen are heated through....scramble the 1 egg in microwave 1 min, add in.
