    cauliflower, fresh
  • 1 c
    mixed vegetables, frozen
  • 2
    green onion, chopped
  • 1 Tbsp
    canola oil
  • 1
    egg, scrambled and 1/4 cup of low sodium soy sauce

How to Make Cauliflower Rice Veggie Fry

Step-by-Step

  1. Cut Cauliflower in pieces, discard stem
  2. "Rice" in a food processor, pulsing several times until it looks like rice.
  3. Saute in a skillet with the canola oil and chopped green onions.... till a little brown.
  4. add in the soy sauce ( adjust to your taste as needed) as well as the frozen veggies, fry together and cover about 5 -10 mins until frozen are heated through....scramble the 1 egg in microwave 1 min, add in.
