- 1 - cauliflower, fresh
- 1 cup mixed vegetables, frozen
- 2 - green onion, chopped
- 1 tablespoon canola oil
- 1 - egg, scrambled and 1/4 cup of low sodium soy sauce
How To Make cauliflower rice veggie fry

Step 1Cut Cauliflower in pieces, discard stem

Step 2"Rice" in a food processor, pulsing several times until it looks like rice.

Step 3Saute in a skillet with the canola oil and chopped green onions.... till a little brown.

Step 4add in the soy sauce ( adjust to your taste as needed) as well as the frozen veggies, fry together and cover about 5 -10 mins until frozen are heated through....scramble the 1 egg in microwave 1 min, add in.
