Cauliflower Rice Veggie Fry

1cauliflower, fresh

1 cmixed vegetables, frozen

2green onion, chopped

1 Tbspcanola oil

1egg, scrambled and 1/4 cup of low sodium soy sauce
How to Make Cauliflower Rice Veggie Fry
- Cut Cauliflower in pieces, discard stem
- "Rice" in a food processor, pulsing several times until it looks like rice.
- Saute in a skillet with the canola oil and chopped green onions.... till a little brown.
- add in the soy sauce ( adjust to your taste as needed) as well as the frozen veggies, fry together and cover about 5 -10 mins until frozen are heated through....scramble the 1 egg in microwave 1 min, add in.
