A DAY WITHOUT SUNSHINE-MAKES ME WANT TO COOK!!! SO! Here is my creation on Cauliflower and Broccoli with cheese sauce.

Ingredients

  • 1 can 12-oz evaporated milk
  • 1 can water, using evaporated milk can
  • 1 small head cauliflower, florets only
  • 1 small head broccoli, florets only
  • 1 quart water, as needed to cover florets
  • 1-1/2 teaspoon coarse salt
  • 1 teaspoon black pepper
  • CHEESE SAUCE
  • 2 tablespoons butter
  • 1/2 cup milk mixture
  • 4 slices process american cheese
  • 4 slices process swiss cheese
  • 1/3 cup grated parmesan cheese
  • 1 teaspoon coarse salt
  • 6 slices process american cheese

How To Make cauliflower & broccoli w/cheese sauce

  • Step 1
    Turn oven to 375 degrees. Take a can of evaporated milk and a can of water, mix together and place in a quart jar with a lid, and refrigerate.
  • Step 2
    Take the cauliflower and broccoli florets and place in a medium pot and cover with 1 quart of water or until water covers florets. Bring water to a boil, on high heat. Turn down to medium and simmer. Add salt and pepper. Cook until fork tender, drain.
  • Step 3
    Meanwhile, in a small saucepan, put butter and milk mixture on medium-high, add the cheeses, [not the 6 slices] and salt. Turn to medium and cook until all cheeses melt. Turn to low. This mixture may be a little runny.
  • Step 4
    Take the cooked and drained florets and place in a medium [8x12] casserole dish. Pour cheese mixture over florets. Place in oven and cook for 15 minutes.
  • Step 5
    After 15 minutes, remove florets from oven. Place slices [6] of American cheese on top of florets. Place back in oven and cook until cheese melts. Remove from oven and let set for 5 minutes.
