This is another dish that lends itself well to "toting" either to a family gathering or a potluck dinner.

Casabah is a milder tasting squash than zucchini but you can substitute zucchini in this dish with good results.

Ingredients

8 medium
calabasa (mexican) squash
1 large
white onion
1 medium
jalapeno pepper
1 can(s)
fire roasted petite diced tomatoes
1 clove
garlic
1 c
fiesta or mexican blend grated cheese
1/2 c
sour cream
dash(es)
paprika
salt & pepper to taste
2 Tbsp
olive oil

How to Make COME W/ME 2 THE CALABASA CASSEROLE (SALLYE)

Step-by-Step

  • 1Preheat oven to 325º

    Peel and quarter onion
    Peel garlic clove and cut in half
    De-seed and de-vein jalapeno pepper and cut in half
  • 2Cut squash into very thin slices into microwave safe bowl.

    Season with salt, pepper and paprika, add 1 teaspoon oil and place in microwave covered with paper towel or paper plate for 4 minutes
  • 3While squash is cooking, place onion, garlic, jalapeno in food processor and pulse until finely chopped
  • 4Heat remaining oil to medium high in heavy skillet.

    Transfer cooked squash and chopped vegetables to skillet and saute for about 3 minutes, stirring frequently to avoid burning
  • 5Add tomatoes (including juice)

    Turn heat down and simmer for 15 minutes

    Remove from heat and add sour cream and cheese

    Mix well and transfer to 9" x 13" baking dish

    Bake at 325º for 15 minutes uncovered

    If desired, sprinkle more cheese over mixture and cook until cheese is browned.
