This is another dish that lends itself well to "toting" either to a family gathering or a potluck dinner. Casabah is a milder tasting squash than zucchini but you can substitute zucchini in this dish with good results.

Ingredients
- 8 medium calabasa (mexican) squash
- 1 large white onion
- 1 medium jalapeno pepper
- 1 can fire roasted petite diced tomatoes
- 1 clove garlic
- 1 cup fiesta or mexican blend grated cheese
- 1/2 cup sour cream
- dash paprika
- - salt & pepper to taste
- 2 tablespoons olive oil
How To Make come w/me 2 the calabasa casserole (sallye)

Step 1Preheat oven to 325º Peel and quarter onion Peel garlic clove and cut in half De-seed and de-vein jalapeno pepper and cut in half

Step 2Cut squash into very thin slices into microwave safe bowl. Season with salt, pepper and paprika, add 1 teaspoon oil and place in microwave covered with paper towel or paper plate for 4 minutes

Step 3While squash is cooking, place onion, garlic, jalapeno in food processor and pulse until finely chopped

Step 4Heat remaining oil to medium high in heavy skillet. Transfer cooked squash and chopped vegetables to skillet and saute for about 3 minutes, stirring frequently to avoid burning

Step 5Add tomatoes (including juice) Turn heat down and simmer for 15 minutes Remove from heat and add sour cream and cheese Mix well and transfer to 9" x 13" baking dish Bake at 325º for 15 minutes uncovered If desired, sprinkle more cheese over mixture and cook until cheese is browned.
