This is another dish that lends itself well to "toting" either to a family gathering or a potluck dinner. Casabah is a milder tasting squash than zucchini but you can substitute zucchini in this dish with good results.

Ingredients

  • 8 medium calabasa (mexican) squash
  • 1 large white onion
  • 1 medium jalapeno pepper
  • 1 can fire roasted petite diced tomatoes
  • 1 clove garlic
  • 1 cup fiesta or mexican blend grated cheese
  • 1/2 cup sour cream
  • dash paprika
  • - salt & pepper to taste
  • 2 tablespoons olive oil

How To Make come w/me 2 the calabasa casserole (sallye)

  • Step 1
    Preheat oven to 325º Peel and quarter onion Peel garlic clove and cut in half De-seed and de-vein jalapeno pepper and cut in half
  • Step 2
    Cut squash into very thin slices into microwave safe bowl. Season with salt, pepper and paprika, add 1 teaspoon oil and place in microwave covered with paper towel or paper plate for 4 minutes
  • Step 3
    While squash is cooking, place onion, garlic, jalapeno in food processor and pulse until finely chopped
  • Step 4
    Heat remaining oil to medium high in heavy skillet. Transfer cooked squash and chopped vegetables to skillet and saute for about 3 minutes, stirring frequently to avoid burning
  • Step 5
    Add tomatoes (including juice) Turn heat down and simmer for 15 minutes Remove from heat and add sour cream and cheese Mix well and transfer to 9" x 13" baking dish Bake at 325º for 15 minutes uncovered If desired, sprinkle more cheese over mixture and cook until cheese is browned.
