I love fresh vegetables. The orange sauce in this recipe really brings out the fresh flavors and gives it a "gourmet" touch.

Ingredients

  • 1 cup diagonally peeled and sliced fresh carrots
  • 1 - 6 oz. package frozen pea pods
  • 1/2 teaspoon finely shredded orange peel (optional)
  • 1/3 cup unsweetened orange juice
  • 1 teaspoon corn starch
  • 2 teaspoons soy sauce

How To Make carrots and pea pods in orange sauce

  • Step 1
In a medium saucepan, cook carrots in a small amount of boiling salted water, covered, for 5 minutes. Add pea pods. Cook for 2-4 minutes more or until vegetables are crisp-tender. Drain.
  • Step 2
    Return to saucepan. Keep warm.
  • Step 3
Meanwhile, for the sauce, in a small saucepan, combine orange juice and cornstarch. Cook and stir over medium heat until the mixture is thickened and bubbly. Cook and stir for 2 minutes more.
  • Step 4
Stir in orange peel and soy sauce. Pour sauce over vegetables. Toss vegetables with sauce and serve.
