carrot salad with walnut,honey,lemon dressing

I created this while trying to come up with an easy carrot salad for my Dad. It is simple, and very versatile. I can see additions of favorite vegetables to your families liking. I would also add some crushed walnuts, but Dad doesnt like them "in things" :) I used what I had on hand, but I think white raisins would present better. The dressing just blends the flavors to perfection. Something different to serve instead of the same 'ol same 'ol. Very tasty indeed!

Ingredients

  • FOR THE DRESSING
  • 4 tablespoons walnut oil. (can use canola,but i used walnut)
  • 4 tablespoons lemon juice
  • 2 tablespoons honey
  • 3 teaspoons snipped chives (or use a small amount of onion)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon celery seed
  • FOR THE SALAD
  • 4 cups shredded carrots
  • 1/2 cup raisins (can use golden)
  • - add walnuts and anything else that strikes your fancy!

How To Make carrot salad with walnut,honey,lemon dressing

  • Step 1
    FOR THE DRESSING: Mix walnut oil,lemon juice,honey,chives,salt,pepper and celery seed together until the honey is well blended into the mixture. Set aside.
  • Step 2
    Shred your carrots (about 8 medium)
  • Step 3
    Add the raisins to the shredded carrots and pour dressing over. Tada! Done! :)
