My sister's co workers put together a cook book in 1990.
I have been making this every since then.
The book was St. Lawrence Psychiatric Center 1890-1990 Centennial Cookbook
I had some trail mix with m and m's and some raisins and thew some of that in too. You can see one of the peanuts there at the top.

Ingredients

  • 2 lb
    carrots, grated ( i use my salad shooter for this)
  • 1/2 c
    seedless raisins
  • 1/2 c
    pineapple chunks, well drained
  • 1 small
    package orange jello
  • 1 Tbsp
    sugar, or to taste
  • dash
    salt
  • 3 Tbsp
    lemon juice

How to Make Carrot Salad Kids Like

Step-by-Step

  1. Grind carrots in a food processor, add everything else, taste to adjust sugar amount, salt.
  2. Cover and refridgerate until ready to serve
