A really good side dish that gets kids to eat their carrots!

Ingredients

  • 4 cups carrots, sliced and cooked
  • 1 medium onion, chopped
  • 3 tablespoons butter
  • 1 can cream of celery soup
  • 1/8 teaspoon black pepper
  • 1/2 cup cheddar cheese, shredded
  • 2 cups herb stuffing (not cubes)
  • 1/3 cup butter, melted

How To Make carrot casserole

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Melt 3 tbsp butter and saute onion. Add soup and pepper. Mix well. Add cheese; stir or whisk until melted.
  • Step 3
    Pour onion mixture into a prepared casserole dish in layers. Onion mixture, carrots, dry herb stuffing, and repeat until you run out of ingredients ending with dry herb stuffing. Pour 1/3 cup melted butter over top.
  • Step 4
    Bake at 350 degrees for 25 minutes, or until heated through.
