How To Make caramelized green beans w/bacon (sallye)
-
Step 1Preparation: Wash beans and snip ends off; drain in a colander. Peel and slice onion into thin slices. Open and drain liquid from can of water chestnuts. Place beans in bowl with sugar, salt and garlic powder and mix until beans are coated.
-
Step 2In medium cast iron or other heavy skillet, cook bacon until crisp. Remove bacon from pan onto cooling rack to drain. DO NOT REMOVE BACON GREASE
-
Step 3Turn heat to medium high and in same pan, add olive oil to bacon grease. When oil/grease combo is rippling, add the coated green beans and onions. Saute for about 5 or 10 minutes until onions and beans are caramelized. Add chicken broth and water chestnuts to beans, cover and cook for about ten more minutes until beans are tender and broth is nice and gravy-like. Crumble cooked bacon into the beans and stir to blend.
-
Step 4Serve while still warm.
