cannelini and chickpea salad

I had this salad in the beautiful mountains of southwest Virginia this weekend. Wintergreen mountain resort - a great place! Compliments of my cousin Mary Jean.

Ingredients

  • 1 can cannelini beans, rinsed and drained
  • 1 can chick peas, rinsed and drained
  • 1/2 cup purple onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup red bell pepper, chopped
  • 1 cup white shoepeg corn, drained
  • 1/2 cup olive oil, light
  • 1/4 cup fresh squeezed lemon juice
  • 1 teaspoon greek seasoning

How To Make cannelini and chickpea salad

  • Step 1
    Be sure all beans and corn are well drained. Stir together in a large bowl with the chopped vegetables.
  • Step 2
    Whisk together the oil, lemon juice, and Greek seasoning. Pour over the beans and vegetables, mixing well. Refrigerate 1 hour before serving.
