I had this salad in the beautiful mountains of southwest Virginia this weekend. Wintergreen mountain resort - a great place! Compliments of my cousin Mary Jean.

Ingredients

cannelini beans, rinsed and drained
1 can(s)
chick peas, rinsed and drained
1/2 c
purple onion, chopped
1/2 c
celery, chopped
1/2 c
red bell pepper, chopped
1 c
white shoepeg corn, drained
1/2 c
olive oil, light
1/4 c
fresh squeezed lemon juice
1 tsp
greek seasoning

How to Make Cannelini and Chickpea Salad

Step-by-Step

  • 1Be sure all beans and corn are well drained. Stir together in a large bowl with the chopped vegetables.
  • 2Whisk together the oil, lemon juice, and Greek seasoning. Pour over the beans and vegetables, mixing well. Refrigerate 1 hour before serving.
