calabacitas soup w/ or w/out meat

Found this soup in Antonito CO, and my husband and I loved it! Came home and tried it at the Cafe I worked at and it was a hit! You can use pork loin or Chicken or go vegetarian. Original calabacitas is Squash, corn, onions and Green chiles,for a side dish.

Ingredients For calabacitas soup w/ or w/out meat

  • 3 zuchinni and 3 yellow squash 1 can whole corn kernals 1/2 pound cubed chicken or pork loin 1
  • 1 onion 2 cloves of garlic chopped 1/2 pound chopped green chiles roasted or 12oz container frozen chopped green chiles
  • 2 qts chicken broth +
  • 2 t oil and 2 t butter

How To Make calabacitas soup w/ or w/out meat

    Cook meat golden brown in small amt of oil add onions and saute til cooked through add squash and 2 T butter cook 2 min.

    add corn and broth correct seasoning w/ salt and pepper or boullion cubes your choice bring to just the start of boil or when squash is soft. Serve. Enjoy a taste of the SouthWest!
