Ingredients
- 3 cups butternut squash cubed
- - olive oil
- - salt and pepper
- 2 cups chicken broth
- 1/2 cup onion
- 1 tablespoon olive oil
- 2 cups mushrooms sliced
- 1 tablespoon garlic minced
- 1 cup quinoa (we used red and white)
- 1 tablespoon thyme, leaves
- 1 tablespoon sage leaves, fresh
- 1/2 cup peas frozen
- 1/4 cup parmesan cheese
- 2 tablespoons walnuts chopped
How To Make butternut squash quinoa

Step 1Preheat oven to 425F toss squash. Place in oven for 25 minutes stiring every ten minuts untill tender. Set aside.

Step 2Toast quinoa in a sauce pan, add onions, garlic and broth cook for 15 minutes.

Step 3Add mushrooms peas, thyme and sage cook for an additional 5 minutes

Step 4Garnish with walnuts and cheese
