Ingredients

  • 3 c
    butternut squash cubed
  • ·
    olive oil
  • ·
    salt and pepper
  • 2 c
    chicken broth
  • 1/2 c
    onion
  • 1 Tbsp
    olive oil
  • 2 c
    mushrooms sliced
  • 1 Tbsp
    garlic minced
  • 1 c
    quinoa (we used red and white)
  • 1 Tbsp
    thyme, leaves
  • 1 Tbsp
    sage leaves, fresh
  • 1/2 c
    peas frozen
  • 1/4 c
    parmesan cheese
  • 2 Tbsp
    walnuts chopped

How to Make Butternut Squash Quinoa

Step-by-Step

  1. Preheat oven to 425F toss squash. Place in oven for 25 minutes stiring every ten minuts untill tender. Set aside.
  2. Toast quinoa in a sauce pan, add onions, garlic and broth cook for 15 minutes.
  3. Add mushrooms peas, thyme and sage cook for an additional 5 minutes
  4. Garnish with walnuts and cheese
