butternut squash bake

I've tried this recipe, ( from my dad,) using different kinds of squash. This squash tastes the best w/ this recipe, at least I think so. Just don't tell my dad!!! Really I just love butternut squash almost any way it's cooked.

Ingredients

  • 3 pounds butternut squash, peeled, cubed
  • 2 large eggs, beaten
  • 1 cup reduced-fat, shredded cheddar cheese
  • 1 large onion, chopped
  • 3/4 cup fat-free milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup reduced-fat ritz crackers, crushed
  • 2-1/2 tablespoon butter

How To Make butternut squash bake

  • Step 1
    Boil squash in lg pot of water until tender, about 20 min. Drain, place in lg bowl. W/ mixer on med-low, mash squash. In another bowl, combine beaten eggs, cheese, onion, milk, salt & pepper. Add mix to the squash and w/ mixer, mix until smooth. Spray a 2-quart baking dish w/ cooking spray. Transfer squash mix to baking dish. Sprinkle w/ crushed crumbs and evenly dot w/ butter. Bake @ 350, uncovered for 45 min.
