Butternut squash bake
Really I just love butternut squash almost any way it's cooked.
3 lbbutternut squash, peeled, cubed
2 largeeggs, beaten
1 creduced-fat, shredded cheddar cheese
1 largeonion, chopped
3/4 cfat-free milk
1/2 creduced-fat ritz crackers, crushed
How to Make Butternut squash bake
- Boil squash in lg pot of water until tender, about 20 min. Drain, place in lg bowl. W/ mixer on med-low, mash squash. In another bowl, combine beaten eggs, cheese, onion, milk, salt & pepper. Add mix to the squash and w/ mixer, mix until smooth. Spray a 2-quart baking dish w/ cooking spray. Transfer squash mix to baking dish. Sprinkle w/ crushed crumbs and evenly dot w/ butter. Bake @ 350, uncovered for 45 min.
