While visiting our relatives, our brother in law had us try this wonderful fresh salsa he made using fresh vegetables from his garden. It was so light and fresh tasting and we couldn't get enough of it. Hope you all like it too.
1Chop all vegetables very fine. Add remaining ingredients. Stir completely. Place in bowl with airtight lid and let marinate all day. Stir once in a while to distribute all the vegetables in the vinegar.
2Enjoy with tortilla chips or over tacos, or in a taco salad.
