Broccoli Salad w/ Raisins and Mandarin Oranges

Lisa 'Gayle' Goff

our Grocery store makes a version of this salad but they use the bagged precut broccoli so the gas they use to preserve the broccoli makes a sulfur smell so I decided to do it myself. You can use any nuts but cashews or sunflower seeds are my favorites I've found.

broccoli crowns (cooked al dente or you can use raw if you prefer)
1/2 c
golden raisins
1/2 c
red onion finely diced
1 small
can of mandarin oranges
8 oz
water chestnuts (drained and diced) *optional
8 slice
crispy bacon
1 c
nuts (sunflower seeds, cashews or pecans)

1 c
2 Tbsp
apple cider vinegar
1 Tbsp
sugar *optional

1Cook broccoli (if you are cooking it, just rinse and drain if you are using raw broccoli), run under cold water until completely cooled then place on paper towels to remove all excess water.
2Cook bacon and set aside on paper towels to cool and drain.
3Chop broccoli, red onion, water chestnuts and Bacon, add chopped items and the rest of the salad ingredients to a large bowl.
4prepare dressing in a small bowl and toss with ingredients in the large bowl. (you can serve this right away but it is best after sitting for about 30 minutes to let the flavors meld)
