broccoli rice casserole
This recipe was shared with me from a very good friend Letitia Guinn from IUKA, Ms.for my cookbook, I have made it quite a few times, and it is very very good. I even embellished the original recipe with French Fried onion rings on top, to add more texture and crunch to the recipe, and also garnished the top with triangles of sliced American Cheese. It is quick easy and very simple. Hope you like it as much as we do.

Ingredients
- 1 package 16 oz. frozen chopped broccoli, cooked & drained
- 1 package 5 oz. bag mahatma yellow rice, cooked
- 1 can cream of chicken soup
- 1 small onion, chopped
- 1/2 stick butter, melted
- 2 cups grated cheddar cheese
- 3/4 cup french fried onion rings (topping)
How To Make broccoli rice casserole

Step 1Preheat oven to 350 degrees F. Mix all ingredients in a large bowl and stir to mix, then pour into a greased 9X13 X2 inch casserole dish. Bake in oven for 30 minutes, then add onion rings and bake an additional 5 to 7 minutes. Remove from oven and serve immediately.

Step 2In a hurry to make dinner, this is a great tasting side item.
