I used fresh Broccoli the first time (as seen in picture); Second Time I was grossed out by bugs still in the stems, after seeing this is common online due to the florets being so close together, now I use Frozen haha
So good even my son had seconds!

Ingredients

  • 2-3 medium
    heads of broccoli or cauliflower (or 6 cups) (cooked)
  • 1 Tbsp
    butter
  • 1 to 2 clove
    garlic (minced)
  • 1 c
    heavy cream
  • 3/4 c
    shredded mozzarella
  • 5-6 oz
    cream cheese
  • 1/2 c
    shredded cheddar (plus extra to top the broccoli before baking!)

How to Make BROCCOLI MAC & CHEESE (LOW CARB)

Step-by-Step

  1. Preheat oven to 425 Degrees
  2. Place Broccoli/Cauliflower in Baking Dish
  3. Sauce Pan, heat butter and garlic
  4. Add heavy cream and Cheese, Stir until melted/smooth.
  5. Pour over Broccoli/Cauliflower
  6. Top with Extra Shredded Cheddar Cheese
  7. Bake for 20 to 30 Minutes (Cheese starts to turn slightly golden brown)
