This is one of those side dishes we have to have every thanksgiving, but it is complete enough to be a meal in itself.

Ingredients

  • 4-6 cups broccoli florets, cut to about 1 inch pieces
  • 30 ounces creamed corn
  • 4 large eggs
  • 1 large sweet onion, minced
  • pinch salt and pepper
  • 1/2 can evaporated milk
  • 1 tablespoon butter
  • 1/2 package ritz or keebler club crackers, crushed

How To Make broccoli corn casserole

  • Step 1
    mix together the first six ingredients together well
  • Step 2
    pour into a buttered dutch oven or baking dish
  • Step 3
    top with crushed crackers and dot these with butter
  • Step 4
    bake at 350, covered, for one hour, then for 10 minutes uncovered to brown the crackers.
