This is one of those side dishes we have to have every thanksgiving, but it is complete enough to be a meal in itself.

Ingredients

  • 4-6 c
    broccoli florets, cut to about 1 inch pieces
  • 30 oz
    creamed corn
  • 4 large
    eggs
  • 1 large
    sweet onion, minced
  • pinch
    salt and pepper
  • 1/2 can(s)
    evaporated milk
  • 1 Tbsp
    butter
  • 1/2 pkg
    ritz or keebler club crackers, crushed

How to Make broccoli corn casserole

Step-by-Step

  1. mix together the first six ingredients together well
  2. pour into a buttered dutch oven or baking dish
  3. top with crushed crackers and dot these with butter
  4. bake at 350, covered, for one hour, then for 10 minutes uncovered to brown the crackers.
