broccoli/cauliflower with spaghetti

This is a family favorite and very healthy too. We eat this as a one pot meal. Serve with a generous helping of Romano cheese.

Ingredients

  • 1 bunch broccoli
  • 1 - head of cauliflower
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 6 cups water
  • 1/2 package thin spaghetti
  • 1/3 cup olive oil, extra virgin
  • - romano cheese, grated

How To Make broccoli/cauliflower with spaghetti

  • Step 1
    Add 6 cups water to 8 qt stock pot.
  • Step 2
    Add garlic, onion, salt and pepper. Turn on heat and bring to boil, then reduce heat to simmer.
  • Step 3
    Cut stem off of broccoli and quarter. Remove core of cauliflower and quarter. Add to pot. Drizzle with olive oil, cover and cook for 30 minutes.
  • Step 4
    Break spaghetti in half and add to pot and cook for another 10 minutes or until tender. You can add the whole package of spaghetti to stretch this meal for a bigger family.
