Ingredients

  • 1 Tbsp
    olive oil
  • 12 oz
    fresh mushrooms, sliced
  • 1 medium
    shallot, peeled and chopped
  • 1/4 c
    sherry (not cooking sherry)
  • 4 c
    fresh broccoli florets
  • 1/2 tsp
    salt
  • 1/2 c
    chicken broth
  • 1/4 tsp
    ground black pepper

How to Make Broccoli and Mushrooms

Step-by-Step

  1. In large skillet, heat oil over medium. Add mushrooms and shallots, cook 8 minutes or until mushrooms are beginning to brown.
  2. Add sherry and cook 2 minutes, or until liquid is absorbed, stirring often.
  3. Remove mushrooms from skillet with slotted spoon. Set aside.
  4. Add broccoli, salt, and broth. Bring to boil, reduce heat to simmer, cover, and cook 10 minutes or until broccoli is crunchy but soft.
  5. Return mushrooms to skillet. Add pepper. Toss vegetables to mix. Serve.
