Ingredients

  • 1 tablespoon olive oil
  • 12 ounces fresh mushrooms, sliced
  • 1 medium shallot, peeled and chopped
  • 1/4 cup sherry (not cooking sherry)
  • 4 cups fresh broccoli florets
  • 1/2 teaspoon salt
  • 1/2 cup chicken broth
  • 1/4 teaspoon ground black pepper

How To Make broccoli and mushrooms

  • Step 1
    In large skillet, heat oil over medium. Add mushrooms and shallots, cook 8 minutes or until mushrooms are beginning to brown.
  • Step 2
    Add sherry and cook 2 minutes, or until liquid is absorbed, stirring often.
  • Step 3
    Remove mushrooms from skillet with slotted spoon. Set aside.
  • Step 4
    Add broccoli, salt, and broth. Bring to boil, reduce heat to simmer, cover, and cook 10 minutes or until broccoli is crunchy but soft.
  • Step 5
    Return mushrooms to skillet. Add pepper. Toss vegetables to mix. Serve.
