Don't know where I got this recipe from, but as I love both broccoli and corn, I just had to try it. Was amazed at the easiness of putting this together,

Ingredients
- 2 tablespoons chopped onions
- 2 tablespoons butter or margarine, divided
- 1 tablespoon flour
- 1-1/4 cup milk
- 1 package (8oz) shredded monterey jack cheese
- 1 can corn,(11oz), drained
- 12 - ritz crackers, crushed (about 1/2 cup)
- 2 packages (10oz. each)frozen broccoli spears, thawed, drained
How To Make broccoli and corn scallop

Step 1Heat oven to 350 degrees. Cook and stir onions in butter in medium saucepan on medium heat one minute. Blend in flour. Gradually stir in milk; cook and stir until thickened.

Step 2Add cheese; cook for 2 to 3 minutes or until melted, stirring constantly. Stir in corn and 1/4 cup cracker crumbs.

Step 3Place broccoli in a 12x8 baking dish; top with sauce. Melt remaining butter, mix with remaining cracker crumbs. Sprinkle over sauce. Bake 30 minutes or until heated through.

Step 4Bake for 30 minutes or until heated through.
