Don't know where I got this recipe from, but as I love both broccoli and corn, I just had to try it. Was amazed at the easiness of putting this together,

Ingredients

  • 2 tablespoons chopped onions
  • 2 tablespoons butter or margarine, divided
  • 1 tablespoon flour
  • 1-1/4 cup milk
  • 1 package (8oz) shredded monterey jack cheese
  • 1 can corn,(11oz), drained
  • 12 - ritz crackers, crushed (about 1/2 cup)
  • 2 packages (10oz. each)frozen broccoli spears, thawed, drained

How To Make broccoli and corn scallop

  • Step 1
    Heat oven to 350 degrees. Cook and stir onions in butter in medium saucepan on medium heat one minute. Blend in flour. Gradually stir in milk; cook and stir until thickened.
  • Step 2
    Add cheese; cook for 2 to 3 minutes or until melted, stirring constantly. Stir in corn and 1/4 cup cracker crumbs.
  • Step 3
    Place broccoli in a 12x8 baking dish; top with sauce. Melt remaining butter, mix with remaining cracker crumbs. Sprinkle over sauce. Bake 30 minutes or until heated through.
  • Step 4
    Bake for 30 minutes or until heated through.
