Bread and Butter Pickles

2 qtcucumbers, or 16 (4-5 inches long) each, sliced
1 1/2 csalt
1 qtboiling water
2 conion, sliced
2 cgreen bell peppers, sliced
2 cred or yellow bell peppers, sliced
2 ccider vinegar
1 tspcelery seed
1 tspmustard seed
3/4 tspturmeric seed
How to Make Bread and Butter Pickles
- In a large glass bowl, toss cucumber slices with salt. Pour boiling water over and let set overnight.
- Next day:
Put on a large pot of water to boil. Use a pot large enough to process jars in.
- Prepare vegetables and combine with remaining ingredients in a large sauce pan. Stir over medium heat until sugar is dissolved. Increase heat and bring to a boil.
- Add cucumbers to mixture and cook gently for five minutes.
- Pack mixture into clean, sterilized jars, remove air bubbles and seal. Process in boiling water for five minutes.
