This is a side dish and is generally eaten with either steamed rice or roti [an Indian bread]. Bottle gourd itself is very healthy and the dish has the nutrition of both the vegetable and the Mung lentil / bean.

Ingredients

  • 1 - bottle gourd
  • 1/2 cup golden mung bean
  • 1 teaspoon fenugreek seeds [optional]
  • 2 tablespoons cilantro, fresh - chopped
  • 2 tablespoons vegetable oil
  • - salt to taste
  • - turmeric for the color
  • 1 tablespoon plain butter [optional]
  • 1 - green chilli

How To Make bottle gourd with golden mung bean

  • Step 1
    Cut bottle gourd in small square / rectangular pieces.
  • Step 2
    Soak golden mung bean in water for 10 - 15 minutes.
  • Step 3
    In the mean time heat oil in a pan and add fenugreek seeds. Once the seeds start to crackle, add the chooped bottle gourd, strained soaked golden mung, salt and turmeric [optional].
  • Step 4
    Cook for 15 - 20 minutes till the bottle gourd is done and the vegetable is not watery. [You can add green chilli to offer a nice flavor and then take that out after a while]
  • Step 5
    Garnish with cilantro and serve with butter.
