egg plant, peeled and cubed
4 to 6 slice
1 medium
onion, diced
1/2 c
diced green bell pepper
1-8oz can(s)
tomato sauce, italian seasoned
1/4 tsp
salt and pepper
1/2 tsp
oregano, dried,thyme,cumin,and curry powder
bay leaves
3/4 tsp
garlic powder
1/3 c
sliced pitted olives
celery ribs, diced
mushrooms, your choice

How to Make BOB'S Stewed Eggplant.


  • 1In a cast iron dutch oven over med heat. Cook bacon till chrisp. Remove with slotted spoon, drain and crumble. Set a side.. In the bacon drippings cook onion,pepper,celery , and mushrooms lightly..Now add eggplant and every thing else,(Except bacon and olives). Cover and cook 30 to 40 minutes or untill eggplant is tender..Uncover,add olives and bacon just befor serving...
