With so much zucchini coming out of the garden. I was looking for ways to use all that was coming out. Found this in an old cook book. Added some things of my own. I hope that you enjoy this if you try it. I think it is very good..

Ingredients

  • 2 pounds zucchini
  • 1 1/3 cups mild chedder cheese, shredded
  • 1/2 cup cottage cheese
  • 1/2 cup chopped nuts, your choice
  • 1 cup button mushrooms , cooked.
  • 1/2 pound bacon. cooked and chopped.
  • 4 large eggs, betten.
  • 3/4 cup bread crumbs, seasoned
  • 3 tablespoons chopped parsley,
  • 2 tablespoons chopped thyme
  • - salt and pepper, to taste.
  • 5 tablespoons real butter, devided.

How To Make bob wakeman's baked zucchini.

  • Step 1
    in a non-stick skillet. add 1 1/2 tablespoon butter. Cook mushroom and bacon till bacon is crisp. Remove and crumble. Wash zucchini and cut crosswise into 1/4 inch slices. Pre-heat oven to 375.
  • Step 2
    Combine cheese, nuts, parsley, thyme, salt and pepper, bacon, and bread crumbs. mix well, In a baking dish layer zucchini then some of the sauce. Layer till all the zucchini is used up.
  • Step 3
    Pour butter and bacon drippings over the backing dish. Then dot with remaining butter. Back at 375 for about 45 minutes. Serve with your choice of meat.
