bob wakeman's baked zucchini.
With so much zucchini coming out of the garden. I was looking for ways to use all that was coming out. Found this in an old cook book. Added some things of my own. I hope that you enjoy this if you try it. I think it is very good..

Ingredients
- 2 pounds zucchini
- 1 1/3 cups mild chedder cheese, shredded
- 1/2 cup cottage cheese
- 1/2 cup chopped nuts, your choice
- 1 cup button mushrooms , cooked.
- 1/2 pound bacon. cooked and chopped.
- 4 large eggs, betten.
- 3/4 cup bread crumbs, seasoned
- 3 tablespoons chopped parsley,
- 2 tablespoons chopped thyme
- - salt and pepper, to taste.
- 5 tablespoons real butter, devided.
How To Make bob wakeman's baked zucchini.

Step 1in a non-stick skillet. add 1 1/2 tablespoon butter. Cook mushroom and bacon till bacon is crisp. Remove and crumble. Wash zucchini and cut crosswise into 1/4 inch slices. Pre-heat oven to 375.

Step 2Combine cheese, nuts, parsley, thyme, salt and pepper, bacon, and bread crumbs. mix well, In a baking dish layer zucchini then some of the sauce. Layer till all the zucchini is used up.

Step 3Pour butter and bacon drippings over the backing dish. Then dot with remaining butter. Back at 375 for about 45 minutes. Serve with your choice of meat.
