Bob Wakeman's Baked zucchini.
Found this in an old cook book. Added some things of my own. I hope that you enjoy this if you try it. I think it is very good..
1 1/3 cmild chedder cheese, shredded
1/2 ccottage cheese
1/2 cchopped nuts, your choice
1 cbutton mushrooms , cooked.
1/2 lbbacon. cooked and chopped.
4 largeeggs, betten.
3/4 cbread crumbs, seasoned
3 Tbspchopped parsley,
2 Tbspchopped thyme
·salt and pepper, to taste.
5 Tbspreal butter, devided.
How to Make Bob Wakeman's Baked zucchini.
- in a non-stick skillet. add 1 1/2 tablespoon butter. Cook mushroom and bacon till bacon is crisp. Remove and crumble.
Wash zucchini and cut crosswise into 1/4 inch slices.
Pre-heat oven to 375.
- Combine cheese, nuts, parsley, thyme, salt and pepper, bacon, and bread crumbs. mix well,
In a baking dish layer zucchini then some of the sauce. Layer till all the zucchini is used up.
- Pour butter and bacon drippings over the backing dish. Then dot with remaining butter.
Back at 375 for about 45 minutes.
Serve with your choice of meat.
