black bean salsa

I was using RoTel tomatoes for Cheese Grits and saw this recipe on the can, so I tried it. It is delicious as a side dish or by itself.

Ingredients

  • 1 can 15 oz black beans, drained, rinsed
  • 1 can 10 oz rotel original diced tomatoes & chilies, drained
  • 1/2 cup whole kernel corn, frozen or canned
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1/4 teaspoon ground cumin

How To Make black bean salsa

  • Step 1
    Mix all ingredients in medium bowl. Cover and refrigerate 30 minutes to allow favors to blend.
  • Step 2
    Serve with tortilla chips, tacos, or burritos, if desired.
