I love beets and love the colors they bring to the table ! In this cold side dish, A little purple cabbage combines with sweet and sour beets and onions....a little sprinkle of grated carrots for good measure :0) The flavors are addictive !

    ( 15.5 oz) sweet & sour harvard beets, drained
  • 1 jar(s)
    ( 16 oz) sweet & sour red cabbage, drained
  • 1/2 c
    thinly-sliced red onion
  • 3/4 c
    thinly sliced green onions, divided
  • 1/2 c
    finely grated carrots

How to Make Beets Me! Salad


  1. In a large bowl, combine the drained beets and cabbage.
  2. Add the red onions and half of the green onions and fold together.
  3. To serve, sprinkle the salad with the grated carrots and remaining green onions.
