beef and black-eyed pea casserole
I like to use this as alternative to plain black-eyed peas on New Years Day. Sort of like hoppin-john but with ground beef!

Ingredients
- 1 pound ground round
- 1 large garlic clove, minced
- 2 cans (15 ounce) black-eyed peas with jalapenos, drained
- 1 can (16 ounce) chopped tomatoes, drained
- 2 cups cooked rice
- 1 cup cheddar cheese, shredded (4 ounces)
- 1/2 cup minced onion
- 1 tablespoon butter, melted
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
How To Make beef and black-eyed pea casserole

Step 1Brown the ground round and garlic in a large skillet over medium heat, stirring until the meat crumbles. Drain and place in a large bowl.

Step 2Add the black-eyed peas and remaining ingredients; stir well.

Step 3Place the mixture in a lightly greased 13 x 9 x 2 inch baking dish. Bake, uncovered, at 350 degrees for 20 minutes.
