I like to use this as alternative to plain black-eyed peas on New Years Day. Sort of like hoppin-john but with ground beef!

Ingredients

  • 1 pound ground round
  • 1 large garlic clove, minced
  • 2 cans (15 ounce) black-eyed peas with jalapenos, drained
  • 1 can (16 ounce) chopped tomatoes, drained
  • 2 cups cooked rice
  • 1 cup cheddar cheese, shredded (4 ounces)
  • 1/2 cup minced onion
  • 1 tablespoon butter, melted
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

How To Make beef and black-eyed pea casserole

  • Step 1
    Brown the ground round and garlic in a large skillet over medium heat, stirring until the meat crumbles. Drain and place in a large bowl.
  • Step 2
    Add the black-eyed peas and remaining ingredients; stir well.
  • Step 3
    Place the mixture in a lightly greased 13 x 9 x 2 inch baking dish. Bake, uncovered, at 350 degrees for 20 minutes.
