bed o' beans (green beans)
My husband, who is not terribly fond of string beans, made this for Christmas Dinner. These are so good! He liked them too! They're a great side dish, and they also make a nice bed for steak or lobster. This was actually part of a recipe for lobster (that we didn't like too much), but these beans were awesome!

Ingredients
- 1/2 pound bacon, thick sliced
- 1 - sweet onion, halved & sliced thin
- 1/2 pound fresh string beans, julienned
- 1 teaspoon garlic, minced
- 1 teaspoon parsley, chopped fine
- - salt & pepper
How To Make bed o' beans (green beans)

Step 1In a large cast iron skillet, cook bacon until just crispy.

Step 2Remove bacon & cut into long slivers. Return to skillet.

Step 3Add the onions and saute for 2 mins.

Step 4Add the beans & continue to saute for 2-3 mins until tender crisp.

Step 5Season with salt & pepper. Add in the garlic. Serve.
