bed o' beans (green beans)

My husband, who is not terribly fond of string beans, made this for Christmas Dinner. These are so good! He liked them too! They're a great side dish, and they also make a nice bed for steak or lobster. This was actually part of a recipe for lobster (that we didn't like too much), but these beans were awesome!

Ingredients

  • 1/2 pound bacon, thick sliced
  • 1 - sweet onion, halved & sliced thin
  • 1/2 pound fresh string beans, julienned
  • 1 teaspoon garlic, minced
  • 1 teaspoon parsley, chopped fine
  • - salt & pepper

How To Make bed o' beans (green beans)

  • Step 1
    In a large cast iron skillet, cook bacon until just crispy.
  • Step 2
    Remove bacon & cut into long slivers. Return to skillet.
  • Step 3
    Add the onions and saute for 2 mins.
  • Step 4
    Add the beans & continue to saute for 2-3 mins until tender crisp.
  • Step 5
    Season with salt & pepper. Add in the garlic. Serve.
