bbq lentils with tomatoes and green tomatillos

This could be served as a side, but on this particular night it was served as the main course. I really prefer this recipe with lamb broth, but short of making your own, I doubt you will be able to find any. I made my lamb broth from a tbone from a lamb steak and the bone from a lamb shank... water and a little salt. Sometimes I throw in a little bit of vegetable scraps in a cheesecloth. Either way you do it, please enjoy!

Ingredients

  • 1 pound lentils, dry
  • 4 cups water
  • 2 cups beef or lamb broth
  • 2 cups homemade bbq sauce or 1 bottle of store bought
  • 3 - tomatoes, cut largely
  • 4 - tomatillos, fresh, quartered
  • 1 tablespoon dark brown sugar
  • 1 teaspoon seasoned salt

How To Make bbq lentils with tomatoes and green tomatillos

  • Step 1
    Place all ingredients in a lidded pot. Bring to a boil, then reduce heat to low medium.
  • Step 2
    Cover and cook for 1 hour, stirring frequently.
  • Step 3
    After the lentils are soft, remove lid and allow to reduce to your desired thickness.
