Ingredients

  • 1 1/2-2 lb
    your choice of the following, or any combination
  • ·
    carrot, cut in to 1-2 inch pieces
  • ·
    brussel sprouts
  • ·
    broccoli florets
  • ·
    cauliflower, small florets
  • ·
    zucchini
  • ·
    yellow squash
  • 1/2 c
    water
  • 1/2 c
    balsamic vinegar
  • 1 Tbsp
    vegan margarine
  • ·
    salt and pepper to taste

How to Make Balsamic Glazed Vegetables

Step-by-Step

  1. place veggies in a pan with water and vinegar. Bring to a boil and cover. reduce heat to medium and cook 10 minutes. Remove lid and increase heat, to allow water and vinegar to reduce and glaze the veggies, about 5-7 minutes.
  2. When glazed to a sweet, rich brown color, add vegan margarine to coat veggies lightly. season with salt and pepper, and serve.
