Ingredients

1 1/2-2 lb
your choice of the following, or any combination
carrot, cut in to 1-2 inch pieces
brussel sprouts
broccoli florets
cauliflower, small florets
zucchini
yellow squash
1/2 c
water
1/2 c
balsamic vinegar
1 Tbsp
vegan margarine
salt and pepper to taste

How to Make Balsamic Glazed Vegetables

Step-by-Step

  • 1place veggies in a pan with water and vinegar. Bring to a boil and cover. reduce heat to medium and cook 10 minutes. Remove lid and increase heat, to allow water and vinegar to reduce and glaze the veggies, about 5-7 minutes.
  • 2When glazed to a sweet, rich brown color, add vegan margarine to coat veggies lightly. season with salt and pepper, and serve.
