this is a great dish served over some hot steaming rice or tossed with pasta.

Ingredients

  • 1 1/2-2 pounds your choice of the following, or any combination
  • - carrot, cut in to 1-2 inch pieces
  • - brussel sprouts
  • - broccoli florets
  • - cauliflower, small florets
  • - zucchini
  • - yellow squash
  • 1/2 cup water
  • 1/2 cup balsamic vinegar
  • 1 tablespoon vegan margarine
  • - salt and pepper to taste

How To Make balsamic glazed vegetables

  • Step 1
    place veggies in a pan with water and vinegar. Bring to a boil and cover. reduce heat to medium and cook 10 minutes. Remove lid and increase heat, to allow water and vinegar to reduce and glaze the veggies, about 5-7 minutes.
  • Step 2
    When glazed to a sweet, rich brown color, add vegan margarine to coat veggies lightly. season with salt and pepper, and serve.
