I love fried green tomatoes, so this is my try at lightening it up a bit (although just a bit... there's still a stick of butter in it. haha)

Who says Southern cooking can't be healthy(ish)? These baked, sweet tomatoes are a delight. Try them at your next family dinner or pot luck!

Ingredients
- 6 large green tomatoes
- - salt and pepper to taste
- 2 cups brown sugar
- 3 cups coarse butter cracker crumbs
- 1 stick butter
How To Make baked green tomatoes

Step 1Slice tomatoes in 1/2" slices and layer in casserole dish. Sprinkle with salt and pepper and sugar. Then add the cracker crumbs and dot with butter.

Step 2Bake at 350 until tender but still firm - the time will depend on the thickness and greenness of the tomatoes - but will probably range from 30 to 45 minutes.
