baked green tomatoes

I love fried green tomatoes, so this is my try at lightening it up a bit (although just a bit... there's still a stick of butter in it. haha)

Who says Southern cooking can't be healthy(ish)? These baked, sweet tomatoes are a delight. Try them at your next family dinner or pot luck!

Ingredients

  • 6 large green tomatoes
  • - salt and pepper to taste
  • 2 cups brown sugar
  • 3 cups coarse butter cracker crumbs
  • 1 stick butter

How To Make baked green tomatoes

  • Step 1
    Slice tomatoes in 1/2" slices and layer in casserole dish. Sprinkle with salt and pepper and sugar. Then add the cracker crumbs and dot with butter.
  • Step 2
    Bake at 350 until tender but still firm - the time will depend on the thickness and greenness of the tomatoes - but will probably range from 30 to 45 minutes.
