baked "fried" green tomatoes

We like our "fried" green tomatoes done this way as there is less grease and they are very tasty. The same recipe works very good with eggplant and zucchini also.

Ingredients

  • - green tomatoes thickly sliced--1/4 inch or more
  • 1/2 cup panko bread crumbs
  • 1/2 cup parmesan cheese
  • 1 teaspoon seasoned salt or seasoning of your choice or herbs
  • 1/4 teaspoon pepper
  • - mayonnaise

How To Make baked "fried" green tomatoes

  • Step 1
    Sprinkle tomato slices with salt and lay on paper towel to drain for at least 30 minutes. Blot dry.
  • Step 2
    In a pie pan mix together panko bread crumbs, parmesan cheese, and seasoning or herbs of your choice.
  • Step 3
    Spread a thin coating of mayonnaise on each side of the tomato slices and dip into the bread crumbs pressing to coat well.
  • Step 4
    Lay on a foiled lined cookie sheet and spray with a little Pam.
  • Step 5
    Bake in a preheated 400 degree oven for 20 to 30 minutes until browned and fork tender.
